Korean Lettuce Salad
fresh, crisp lettuce with slightly spicy salad
Makes 4 servings.
Ingredients
- 1 head of green or red leaf lettuce (can also use other crisp lettuce like romaine lettuce)
- 1/4 cup of shredded or shaved carrots
Dressing
- 2.5 Tbsp. soy sauce
- 1 Tbsp. rice wine vinegar
- 2 to 3 tsp. gochugaru (Korean red pepper flakes)
- 2 tsp. toasted sesame oil
- 2 tsp. sesame seeds
- 1 tsp. sugar or plum syrup
- 2 cloves minced garlic
Directions
- Wash and dry the lettuce well and cut each leaf into bite-sized pieces.
- Dressing: In a small bowl, mix together soy sauce, rice wine vinegar, gochugaru, sesame oil, sesame seeds, sugar (or plum syrup), and garlic. Taste and adjust the gochugaru, vinegar, and sugar to your preference.
- Toss: In a large bowl, toss the lettuce and carrots with the dressing and serve immediately.
Recipe Notes
Makes about 1/4 cup of dressing. Adjust the serving size to increase the amount.
Serve with Korean BBQ meats such as bulgogi and galbi.
Variations:
- Additional vegetables: thinly sliced onions, chopped green onions, or cucumber slices
- Proteins: Add shrimp, shredded chicken, or fried tofu to make this a complete meal.
